Italian Chicken and Potatoes:
- Frozen chicken breasts
- Italian dressing (safe)
- Golden potatoes
Cut potatoes into cubes, add everything to crockpot, cool on high for 4 hours. Easy!
Sloppy Jos:
- Ground beef
- Sloppy sauce (safe)
- Schar ciabatta rolls
- Tater tots (safe)
Cook beef, add sauce, cook tots, make sandwiches, enjoy!
Stuffed Peppers:
- Bell Peppers
- Ground beef
- Taco seasoning (safe pre made or DIY)
- Spanish rice (safe pre-made or DIY)
- 1 can black beans
- 8oz GoVeggie vegan cream cheese
Cook taco meat, drain/rinse black beans. Preheat oven to 350 degrees. Clean and hollow out bell peppers. Mix meat, rice, black beans, and vegan cream cheese. Fill peppers, and bake at 350 for 30 minutes (or to desired doneness). You can also pre-prep the insides and store in fridge so you only have to pop them into the oven the night you want to eat them!
Potato Chip Chicken:
- Crushed wavy potato chips (we like HEB BBQ flavor)
- 1 tbsp parsley
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/4 tsp onion powder
- 4 boneless, skinless, thin-sliced chicken breasts
- 2 tablespoons Just Mayo
Preheat oven to 350. Combine crushed chips and seasonings in a large bag. Brush chicken with mayo and coat with crumb mixture. Place in greased pan, bake at 350 for 20-30 minutes. We are having corn on the cob with it.
Baked Potatoes:
- Russet potatoes
- GoVeggie vegan cream cheese, garlic and chives flavor
- Bacon
- SmartBalance
Cook potatoes, cook bacon. Mix insides with cream cheese, bacon, and butter substitute. Yum!
Steak Bites:
Recipes found at Stockpiling Moms. Check broth for safety, sub dairy-free butter (SmartBalance/Earth Balance). We will be serving with these potatoes (we just sub DF butter and use onion powder instead of onions for personal preference).
French Dip Sandwiches:
- Au jus (recipe at Life Free, Gluten Free)
- Schar ciabatta rolls
- Roast beef
- Just Mayo
- GoVeggie vegan grated parm (or other vegan cheese of your choice)
“Butter” rolls, lightly toast. Add meat and desired toppings and cook in toaster oven briefly. Meanwhile, prep au jus. Dip and enjoy!
